Menu Monday

Welcome to Menu Monday. I've decided to try planning our dinner menu a week in advance to see if it helps us to eat home more often and eat more balanced meals. I also saw this on another blog that I follow and thought it was a great idea. Since imitation is the best form of flattery, I'm sure it's okay to steal this idea.

Monday - leftover Chicken Taco Pie (from Sunday)


Tuesday - Stampin' Up Club and lia sophia party - grab 'n' go supper!


Wednesday - Rigatoni with Italian Poultry Sausage and Sweet Peppers


Thursday - fish sticks, dinner rolls, and vegetable/salad


Friday - pizza and salad


Saturday - New recipe! One-Pan Taco Beef and Noodle Skillet

We'll see how well we are able to stick to this. Husband-of-mine, if you are reading this, please don't tempt me to eat out. I am too easily swayed after a long day at work.

I will post this easy recipe. I have been having this ever since I was little. My grandma made it, then my mom, and now me. Ryan loves it. This is my families take on Spanish Rice. It is easy and so yummy.

Spanish Rice
1.5 lb Ground Round or gr. turkey
1/2 lb bacon chopped and fried
a green pepper chopped
about 1 to 1 1/2 cups of rice
1 container of V8

I usually fry up the bacon first, then add the green pepper when the bacon is almost done. Take both out after cooked and gr. pepper is softened. Add gr. round or gr. turkey and cook that up. When that is almost fully browned, add the bacon and green pepper back in the pan. Drain the fat. Spread it out after fat is drained, then add rie and V8. Simmer while being covered until rice is fully sooked and soft. Stirring occassionally. Season to taste.

Now I normally use an Electric Fry pan to make this. It is easier, only one thing gets dirty.
*Note* When completed I put a slice of cheese in between a layer of the spanish rice, and eat it. It is so yummy. Ryan loves it. This is on the menu for this week for us. You can omit the bacon and green pepper also.

Not a problem. I make every once in a while. It is so good, and I am so proud that I figured out how to make it like my grandma does. I will see what other recipes, that are easy, that i can share. See you Saturday!
